This light but delicious salad has only five main ingredients and comes together quickly.  Better yet, the Vietnamese dressing will keep in your fridge for up to a week.

Cook's Note: Her recipe calls for groundnut oil which is simply a British term for peanut oil. If you don't have peanut oil on hand, you can use sesame oil in this recipe since you aren't stir frying or heating the oil.  Peanut oil has a high smoke point but in the case of a cold salad, sesame oil can work.
