Chilaquiles, a classic Mexican casserole, is commonly eaten after a long night of partying. It’s also a great place to use up leftovers like chicken, beef, or grilled vegetables, or fry up a little bacon or chorizo to add in. This recipe for chilaquiles is courtesy Ivy Stark, of Dos Caminos in New York. She prefers hers with fried eggs on top, but serve the eggs cooked however you like.
