Edamame Salad (pictured above)
Mark says: “Edamame are young soy beans that you can simply parboil and eat; in this salad the acid of the lemon and the tang of the cheese really enhance their naturally buttery flavor.”
Edamame are high in fiber, iron, vitamins A and C, and low in fat an calories. Oh, and high in flavor. This salad comes together in seconds but will keep you full for hours.
Mark says, “Corn is food, not just feed.”
Eat real (-ly delicious) food, and you’ll see real results. Basically, if you fill up on fresh vegetable salads, like this one loaded with garden gems like corn and tomatoes, you won’t have any room for chips or cookies, so you’ll look great in your shorts this summer.
