Once you’ve had all the burgers and dogs you (and your waistline) can handle, take a note from this somewhat biased pescatarian and head to the seafood aisle. Whether you like straight-up shellfish or fish fillets, we’ve got recipes that showcase all of your favorites.
A few of my summer standbys:
The Lobster Roll
Lobster is great right out of the shell but for dinner that doesn’t require a bibb try using the meat in a lobster roll. Ellie Krieger’s version uses non-fat Greek yogurt and a whole wheat bun so be sure to help yourself to seconds. Tip: Seafood markets often sell claws or pieces of lobster that are great for rolls; it doesn’t need to be pretty once it’s sandwiched inside. (Ellie Krieger’s recipe shown above.)
Shrimp or Scallop Tacos
Even if you’re not a seafood lover, you’ll quickly become obsessed with these tacos that make a great weeknight meal or DIY weekend party bite. Be sure to make extra guacamole to serve with chips as a starter.
Ceviche is a no-oven-needed dish literally cooks itself; perfect for steamy summer nights when you’re living next to the AC. This version uses scallops and lime juice but you can swap in any shellfish and citrus combination.
