Forget Kellogg’s: Pop-Tarts are getting an upgrade. Candice Reynolds, founder of Red Queen Tarts in Woodstock, Ga., is serving up homemade, artisanal tarts to order.
Where did she get the idea? When she heard that her boyfriend, who is an executive chef for a catering company, was planning to use store-bought Pop-Tarts for an ice cream sandwich bar, she intervened. From there, Red Queen Tarts was born.
Meyer lemon curd, fig and brie, organic hazelnut chocolate, wild blackberry: These are just a few of the fillings she has experimented with. Her personal favorite? Whatever her newest creation is! Reynolds sells her tarts at the Peachtree Road Farmers’ Market in Atlanta on Saturdays, Brookwood Farmers’ Market in Cumming, Ga., on Fridays, and John’s Creek Green Team in Alpharetta, Ga., on Wednesdays.
For those of us not fortunate enough to live nearby, Reynolds also ships her tarts throughout the U.S. Wake up to a better breakfast, or serve them as a nostalgic dessert at a dinner party. Visit her Facebook page for the details.
While she wouldn’t reveal her perfected-pastry dough recipe, Reynolds did offer up her freshest filling recipe to try out at home.
Orange -Scented Rhubarb Filling
1 pound rhubarb, cut into 1/2-inch pieces
1 orange, zested
1/2 cup sugar
1 teaspoon lemon juice
2 tablespoons water
Pinch of salt
- Put all ingredients in a heavy sauce pan and bring to a boil. Turn down to simmer and occasionally gently stir till thickened and rhubarb has broken down into pieces, approximately 15 minutes.
