Meatless Monday: Tofu Salad With Chive Ginger Oil

Don't you need a break from meat today?

If you haven’t jumped on the Meatless Monday bandwagon, today is one of the best days of the year to do so. After several days of indulgences, your gut needs a break. A meatless meal on the Monday after Thanksgiving doesn’t mean scraping the last bits of sweet potato casserole out of the dish and eating it with a side of green beans with crunchy onions and a stale dinner roll. After all those casseroles, a dinner salad is surely in order. Plus, if you still have Thanksgiving leftovers in your ‘fridge, it’s probably a good day to toss them.

This Tofu Salad With Chive-Ginger Oil is packed with enough protein to make it a filling main dish and the Asian flavors of the ginger, sesame and miso are the perfect antidote to all of the heavy American fare you’ve been gorging on since Thursday. Leftovers, if there are any, are brown-bag worthy, but keep the dressing on the side and add if before you eat so the greens don’t get soggy.

 Tofu Salad With Chive Ginger Oil

Makes 4 servings

3 tablespoons sesame seeds
1/2 cup vegetable oil
1 bunch fresh chives, chopped (about 1 cup)
Kosher salt
2 tablespoons finely grated ginger (about 1 ounce)
1/2 cup vegetable broth
2 tablespoons white miso
14 ounces soft tofu, drained, patted dry and cubed
8 cups mesclun (about 3 ounces)
4 cups pea shoots (about 5 ounces)

Put the sesame seeds in a medium dry skillet and toast over medium heat, stirring often, until golden, about 8 minutes. Transfer to a bowl and set aside.

Puree the vegetable oil and chives in a blender until smooth, about 2 minutes. Add the ginger and 1/2 teaspoon salt and pulse just to combine. Set aside.

Whisk together the vegetable broth and miso with a pinch of salt in a large bowl until smooth. Remove 3 tablespoons to another bowl and gently toss the tofu with the dressing. Add the mesclun and pea shoots to the bowl with the remaining miso dressing and toss to combine and coat. Season with salt.

Divide the lettuce among 4 plates and top with the tofu. Drizzle with the chive ginger oil and sprinkle with the sesame seeds.
