First of all, I'm really loving the surprise additions to the cheddar turkey burgers, Suvir. If you don't actually click on the recipe, you fail to see the peanut chutney and raita recipes, added bonuses as well as the addition of curry leaves to the burgers themselves (which I have access to fresh ones in season now!) Delightful, I'm glad I took a look.
My idea to "spice up a comfort food" is for meatballs. Meatballs are very versatile, used as main dishes, apps and in soup, I make ricotta chicken in escarole soup, lamb and pistachio with yogurt tzatitki dipping sauce but the biggest hit are my Thai red curry party bites: pork meatballs with Thai spices including lemongrass, red curry paste, ginger and garlic in a sweet chile glaze.
I am thinking I might need to get ALL of your cookbooks now, Suvir! They all sound divine!
I like to play with homemade mac and cheese–adding roasted tomato or chipotles in adobo, or sundried tomato, charcoal grilled veggies etc……

It's fun to spice up dishes and I do many of mine. I have to agree with some of the other posters though Mac and cheese is one of my favorites to play around with.
BTW those Turkey Cheddar Burgers have we wanting to win this book even more so I can see what other delicious goodies I can cook up from this book.
I have a recipe for a potatoes in a bechamel sort of sauce. When I'm needing some comfort, I tuck slices of a smoked sausage in between the potatoes. No longer vegetarian, but ever so yummy.
Carrots and Peas. I like to hit them with a little chili oil and fresh lemon at the end of the saute.
I love to spice up fried cabbage with cayenne pepper!!!! yuummm……

So many dishes so little time!!!. One that amazes me is stews like braised short ribs…By building with spices you can make a simple piece of meat into a masterpiece. All you need is to pick some seasonal vegetables or some rice or mashed potatoes and voila!
I love to spice up several things, like steaks, chicken, but my favorite to spice up when I make my chili. I've done a lamb chili that was nice a spicy. I used a curry spice as part of the seasoning mix, along with fresh mint.

I love to spice up my Roast Chicken with my special dry rubs, Always with the standard Kosher salt, black pepper and paprika. I change it up with cumin or thyme or oregano and mint. The result is a sensational bird! love to change up my spices!
Baked or roasted potatoes!
I like to add fresh grated nutmeg to most of my dishes…in my greens, spinach, brocolli-rabe, and then my creamy a and red pastas: alfredos, vodka penne, bouiilase, meatballs and sauce, and of course in baking: where ever they ask for cinamon I also add some nutmeg (half of the cinamon measurement)
Alfredo. I love to add new veggies or proteins to it.
I love spicing up the old cure-all, Chicken Noodle Soup. There's nothing that makes me feel more sick than eating bland food, and nothing that wakes up a stuffy nose like a shot of hot sauce or some ginger infused in the broth!
