One of my husband's favorites 14 Carat cake (carrot cake) from scratch it has grated carrots, crushed pineapple, pecans, even raisins if you so desire and then frost with homemade cream cheese frosting and sprinkle with additional chopped pecans. Very Yummy, Moist filling cake.
