Chile rellenos, tamales and, of course, sometimes you just need a burrito.
My favorite is a kind of Tex-Mex thing, Carne Guisda. A Mexican meat and sauted gravy dish here in Texas. Excellent.

Huitlacoche is a natural corn fungus with an intense almost mushroome kinda flavor.

My all time favorite is pork tamales followed by shredded beef enchiladas.

My favorite is "clean out the refrigerator" tacos! Whatever leftovers you have in a tortilla or taco shell and add some salsa–yum!
Loved the ribs that Marcela made for her father's day episode. And Alton Brown's guacamole is the best! Hope I win!

Chicken Mole, sometimes I use pork or turkey.
Spinach Quesadillas, Chips & Queso, Sopapillas with cinnamon, honey & just a touch of whipped cream. YUMMM!
I love chicken fajitas as my all time favorite!
Chiles Rellenos. Filled with cheese, shredded chicken, potato and served with a creamy corn sauce. Thats not how mom made them, but that's how I do it!
Our favorite is Chipotle Pork Burritos. My sons enjoy helping me in the kitchen when we have Mexican night (which is a couple times a week)! New cookbooks would really inspire them.
A big plate of Chilaquiles with some fresh jalapeños or serranos on the side, with an ice-cold michelada to accompany it… is the only way to wake up.
But I tell ya, any ol' bowl of great borracho beans is plenty for winnin' my heart.
