Being a vegan..its so hard to find cuisine that would fit my need but with Mexican food one can never go wrong. Mexican is by far my favorite cuisine of all time…my most favorite dish is Enchiladas and side of guacamole. Cant wait to celebrate Cinco de Mayo!!!
I adore mexican food! My favorite is spinach fajitas. There is nothing like having a sizzling pan of hot, seasoned vegetables as the centerpiece to flour tortillias and all my favorite add-ins.
Enchiladas suizas with tender chicken, mild cheese, tangy sour cream, corny tortillas and slight bite of tomatillo sauce, all baked together. Yum.
My favorite Mexican food would be refried beans, especially is they are not from the can, but made from scratch.
My husband's favorite would be Machachas!
Anything with chipotles, yum!
Fish Tacos!
Fajitas, guacamole, seafood enchiladas…the list is endless
So many dishes to choose from but if I had to pick one, I would choose chopped, marinated, grilled steak in a soft corn tortilla topped with onions, cilantro, salsa verde and a touch of lime…. simple but sooo yummy!
Do Margaritas count as food? No? OK then Enchiladas Verdes

I don't think I have tried a Mexican dish that I do not like yet! It is really hard to bring it down to just one dish but for some new cookbooks I would have to say it would be homemade tamales. Which I can remember eating a lot of when I was a child…always loved to open the corn husks! Was just like unwrapping a wonderful present!

With this I would be able to break into cooking mexican cuisine accurately! This brings taco night to a whole new level. Oh and I would definitely try making flan.

Red Snapper Vera Cruz also Chili Verde, anything you can do with it, soo—good. The flavors are great.
There is a restaurant in San Francisco in a little "speakeasy" that makes the most delicious chicken taco. The restaurant is Nick's Crispy Taco and you have to ask for it "Nick's way" — The shell is crispy and then wrapped in a large corn tortilla (so there is one crispy and one not crispy. It is loaded with everything you could ever want in a taco. Oh so yummy!
