A few weeks ago I had a bite of a pound cake that was sent to my boyfriend by a business associate’s grandmother. I was floored. It was buttery, nutty and all-around delicious. I had to have the recipe and went on a mission to find out more about the incredible cake. What I found was a unique, yet easy-to-follow recipe and a woman with a passion for both baking and family.
CC: When did you start making your famous pound cake?
The Grandmother, Mary Anne Mikula: Thirty-five years ago, I tasted a delicious cake at a party. My daughter was dating a young man who’s aunt had made the cake. After 6 months of asking him frequently to ask his aunt for the recipe, I finally got it. It took several batches and some tears before I perfected the cake. Occasionally the center sinks but it does not effect the taste. I am a mother of 7 children and sixteen grandchildren so I have always baked to keep costs down. My husband and family put in frequent requests to give these pound cakes as gifts.
CC: How has baking changed in your lifetime?
MAM: I find that the younger generation does not have the time to bake as frequently. Bakeries and supermarkets have a wonderful variety of bake goods that are often affordable and very tasty. Although most people can tell the difference between homemade and store bought, buying something rather than baking it seems to done more often but I think everyone appreciates getting something homemade!
CC: What was your favorite dish when you were growing up?
MAM: My mother made delicious beef stew and meatball stew, which I used to request for my birthday dinners!
CC: What would you like to eat on Mother’s Day?
MAM: Spaghetti and meatballs or salmon. I enjoy them both!
Ingredients
Butter, for greasing pans
TOPPING:
1/2 cup fine breadcrumbs
1/2 cup granulated sugar
1/2 cup chopped walnuts
3 tablespoons butter, melted
BATTER:
3 cups all-purpose flour
3 cups granulated sugar
3 teaspoons baking powder
1 cup milk
3 sticks butter, melted
6 large eggs
1 teaspoon almond flavoring
Directions
Preheat the oven to 325 degrees F. Butter 3 loaf pans.
For the topping: Mix the breadcrumbs, sugar, walnuts and melted butter together. Divide among the bottoms of the prepared loaf pans.
For the batter: Mix the flour, sugar and baking powder together. Mix the milk, melted butter, eggs and almond flavoring together. Add the dry ingredients to the wet and mix. Divide the batter evenly among the prepared loaf pans. Bake for 1 hour.
Cool after baking and put in the refrigerator in the pans to chill. It is easier to slice!
