Cookbook Giveaway: The Lodge Cast Iron Cookbook

Use fresh summer peaches to make this Peach Crumb Coffee Cake from The Lodge Cast Iron Cookbook.

A simple cast-iron skillet is one of my favorite kitchen tools, mainly because it can be used with very high heat and retains that heat so amazingly. It’s ideal for searing steaks (one of Alton’s favorite uses) and baking cornbread.

I’m always on the lookout for new ways to put this pan to work, and The Lodge Cast Iron Cookbook doesn’t disappoint. It includes recipes for, yes, cornbread, but also soups and stews, main dishes, side dishes and desserts, with a whole chapter devoted to outdoor cooking. Whether you’re cooking over a campfire or having a backyard barbecue, nothing sets the “rustic cookout” mood better than a summery side dish or dessert served in cast iron.

My cast iron pan is a camping staple! I love cooking breakfast over last night's bonfire – eggs, bacon, and of course potatoes. It all comes to get perfectly in the cast iron pan!

Cornbread just has to be made in my cast iron skillet-you can't get that flavor & texture anywhere else-moist with the crunchy, browned crust.

A Cheesesteak with a yuenglang and an Eagles game tops the uses for my lodge. Although I use it for everything. Once fully seasoned you'd be a fool not to use it for all your cooking.

What!?? You expect me to pick out just one recipe? How can I do that? I have cast iron skillets, a couple of cornbread pans, both indoor and outdoor dutch ovens! I love them all! You wouldn't ask a mother to pick a favorite child would you?
Cast iron is the best way to cook, and my favorite recipe is the last dish that I prepared in cast iron!

Pancakes and bacon! You can cook the bacon in the cast iron skillet first, drain most of the drippings and then use the drippings a little at a time to keep the skillet oiled for cooking the pancakes.

I love frying potatoes & fish but I ONLY make cornbread in cast iron.

  39. John Gilbert posted 06/01/2012

It really depends on the cast iron and what meal of the day it is. The pumpkin dump cake I had in the dutch oven last night for dessert was pretty dang good. Sat around the fire while it cooked. For dinner, in a skillet I made teriyaki chicken with some veggies and then served it over rice I made in a smaller dutch oven. And peach french toast makes an absolutely awesome breakfast. My all time favorite lunch is a deep dish pizza cooked in my 12" skillet right over the open coals of the campfire.
