Pineapple-Infused Rum

It’s more than just alliteration; it’s a statement, a proclamation that Thursdays are when the weekend should really start. Kicking it off right is the key, and what better way than with a cocktail that not only takes the edge off, but tastes good too. A hard thing to disagree with, we know. Drink up, get down and go to sleep happy.

Bright and brimming with tangy, sweet pineapple, this is the boozy weapon your summer bar has been waiting for. Keep a pitcher of this pineapple-infused rum in stock, and turn impromptu imbibing into a classier (and tastier) affair. We're a fan of mixing in a splash of club soda and tart lime wedge, but tonic, coke, sprite or juice all work just as well.

Bottoms up, folks.

Ingredients:

2 cups chopped fresh pineapple

2 cups golden rum

3 tablespoons sugar

Club soda, for topping

Lime wedges, for serving

Directions:

Combine the pineapple, rum and sugar in a bowl or pitcher. Refrigerate at least 8 hours and up to 3 days. Strain the rum, reserving the pineapple. Serve over ice with a splash of soda, a few pieces of the pineapple and several lime wedges.
