It’s more than just alliteration; it’s a statement, a proclamation that Thursdays are when the weekend should really start. Kicking it off right is the key, and what better way than with a cocktail that not only takes the edge off, but tastes good too. A hard thing to disagree with, we know. Drink up, get down and go to sleep happy.

A blistering heat wave has come screaming across the country, which begs the question: has there ever been a better time to sip on a Piña Colada? Light and dark rum star in this wildly refreshing frozen cocktail, blended with classic coconut cream and pineapple juice, along with frozen pineapple pieces for good measure. Bring the beach to your backyard and cool down with a tropical treat this Thursday (or Friday, or Saturday, or Sunday), because, let's face it, it's too hot not to.

Bottoms up, folks.

Ingredients:

1 1/2 cup ice

1/2 cup diced pineapple, frozen

2 ounces pineapple juice

2 ounces Coco Lopez coconut cream

1 1/2 ounces white rum

1 ounce dark rum

Pineapple slices

Directions:

Put the ice, frozen pineapple, juice, coconut cream, and the white and dark rums into a blender. Blend until smooth and frosty. Pour the drink into 2 glasses and garnish the rim with pineapple slices.
