The Sprouted Kitchen CoverHealth food skeptics might expect the recipes in a cookbook titled The Sprouted Kitchen to be all sprouts and seeds, rabbit-food style. Not so in blogger Sara Forte’s new book, beautifully photographed by her husband, Hugh. Sure, Sara’s recipes highlight fresh produce, whole grains and unsaturated fats — but they’re also tempting and satisfying. Case in point: the spicy Ranchero Breakfast Tostadas pictured above.

From vibrant seasonal salads to fruit-spiked cocktails to bites of (unprocessed) indulgence in the treats section, the book’s 100 recipes are mostly original, with a few favorites from Sara’s popular blog folded in.

The Sprouted Kitchen‘s recipes are both impressive and easy, so try one for a simple weeknight meal or your next dinner party:

    A wheat berry salad I found years ago with pistachios, golden raisins, and a cumin dressing. I always overdo the feta, though, so I hope it still counts ;)

    Stir fry with napa or bok choy cabbage, sprouts, mushrooms, onions, garlic, and anything else I may have in the fridge. I use oyster sauce and a bit of soy sauce. It is yummy!!!

    Easy corn salsa – can of corn (rinsed), can of black beans (rinsed), one cubed avocado, can of rotelle tomatoes with sauce, 1/2 chopped onion, 2 T chopped cilantro, mix and eat. Fills you up, not out.

    A black bean chipotle soup, with carrots, onlins, and tomatoes. Flash blending or food processing the mixture makes it thick and hearty, and you can adjust the smokiness and spiciness. It is stick to your ribs good, but it's vegan and low-fat!

    My go-to healthy recipe this year is a take on Heidi's Tortilla Salad in 101cookbooks.com: steamed cauliflower, kale, zucchini, and radishes, canned beans, crushed chips, avocado, feta and a citrus chipotle dressing. A great summer dinner!

    My favorite salad: Mixed greens with organic heriloom cherry tomatoes, mini portobello mushrooms, chunks of mozzarella cheese, celery, red onion, garbanzo beans, cucumber, all covered with olive oil and Northern Italian dressing. Heaven!

    I love making homemade extra garlicky hummus. Awesome with baby carrots and spread on veggie wraps, but my favorite way to eat it is with soft pieces of flatbread, chopped tomatoes, chopped kalamata olives, and chunks of feta. YUM!

    Tuna Nicoise… I make mine with line lemin vin, purple potatoes cooked in little salt thyme nd rosmery, blanched french beans, oven roatsed grape tomatoes, 3/4 of a hard boiled egg, beautifully seared tuna and fat free greek yogurt aioli i make with anchovies, rosted garlic, lemon juice… yummy! all under 370 cal

    When I need something healthy, I tend to make a salad. Really, I just add whatever is sitting around in my fridge. My favorite combo is probably a spring mix with green apple slices, chicken, and Parmesan.

    Fave healthy go-to is a ratatouille-based spread we devour all summer long – sometimes scooping it up with fresh veggies, sometimes slathering it on pizza in place of our usual sauce. Good stuff!
