Kourambiethes are Greek cookies that are a beautiful and delicious twist on a classic shortbread. Ground almonds, butter, flour and sugar are mixed together, baked and then coated in icing sugar.Every time I see them, I have to have one of these little cloud cookies. I love the nuttiness from the almonds.
No Greek home would be found without a stash of these cookies during the holiday season. Every family takes so much pride and pleasure in sharing these cookies, claiming that theirs are the best. In some regions in Greece, bakers place whole cloves within each cookie and in other areas, the cookies are flavored with rose-water, brandy or vanilla. They can be baked in a crescent shape or in balls. No matter the variation, kourambiethes are delicious! These are a great sweet to add to the holiday table. No one will be able to pass them up!

Eden Grinshpan graduated from Le Cordon Bleu in London with the “Grande Diplome” in both Pastry and Cuisine. After graduating she went to India to volunteer with different organizations, one of them being an orphanage called Ramanas Garden. Here she came up with the idea of raising money for the orphanage by re-opening a café, which had not been in operation for some time, and teaching the children the basics of culinary cuisine. After returning to New York City, Eden enrolled in a management program at The Institute of Culinary Education before working at the bakery, Babycakes. Eden is the co-owner of EthNicitY Productions, and hosts Eden Eats, a traveling show to find global cuisine in cities across the US.
