5 Ways to Raise Your Nacho Game

In advance of the Big Game that’s happening this weekend, we thought we’d help you up your own game — your Nacho Game that is. And we don’t mean store-bought chips served with store-bought dip. Add one of these recipes to your Super Bowl menu, and everyone will win, no matter which team they are rooting for.

Once you pick your recipe, it’s time to perfect the dish. Here are 5 ways to raise your nacho game:

  • Make Your Own Tortilla Chips

Yes, good packaged chips are available pretty much everywhere, but sometimes it’s nice to do something just for the fun of it. Deep-fry quartered tortillas in 360 degrees F oil, and then sprinkle with salt, spices or citrus zest for endless variations.

  • Step Up Your Refried Beans

Mash canned pinto beans in a hot pan with melted bacon fat. Add water as needed to produce a chunky paste. It’s a small step to a significant improvement over your standard-issue canned refried beans.

  • DIY Nacho Cheese Sauce

It’s so much easier and more delicious than you ever thought possible. There’s also a practical benefit: melted cheese is time sensitive; it congeals in the time it takes to get from the huddle to the snap. Melted cheese sauce stays melted longer, offers better coverage, and promises less likelihood of a cheeseless chip. Nacho cheese sauce is just white sauce (bechamel) plus grated cheese—and can easily be amped up with onions, cayenne pepper, tomatoes or beer. You’ll have to fight the temptation to eat it with a spoon.
