We are all pretty much aware of the massive food waste that goes on in this world. All you have to do is head to any of your favorite eateries after closing to see that the proof is in the leftover pudding. One industrious college student has begun raiding local dumpsters to collect ingredients for an actual restaurant. That’s right. Welcome to the era of the dumpster dive cafe.
Tufts University student Maximus Thaler and his roommates opened The Gleaner’s Kitchen out of their cooperative living space just a few months back. All of the ingredients are sourced by scouring Boston-area dumpsters for discarded produce and other foodstuff. Thaler says his cafe operates “in a grey area of legality” but he also states that he can eat better out of a dumpster than most Tufts students can afford.
If you are in the mood for some dumpster dishes, the price will be right. The menu is donation-based and meals can even be traded for services.
