Thirsty Thursday: Mojito Slushy

It’s more than just alliteration; it’s a statement, a proclamation that Thursdays are when the weekend should really start. Kicking it off right is the key, and what better way than with a cocktail that not only takes the edge off, but tastes good too. A hard thing to disagree with, we know. Drink up, get down and go to sleep happy.

It’s no secret that mint and lime offer depth and refreshment to summer cocktails, and in this version of the popular Cuban cocktail, fresh mint leaves and lime zest are the star ingredients.

This rum refresher gets an extra-cold update when you blend plenty of crushed ice with lime zest, fresh mint and rum to a slushy-like consistency. The bright and sweet flavor of this mojito makes it the perfect boozy summer dessert.

Bottoms up, folks.

Mojito Slushy

  • 1 cup sugar
  • 1 cup water
  • 1/2 cup fresh lime juice, about 4 to 6 limes
  • 1/4 cup fresh mint leaves, firmly packed
  • 2 limes, zested
  • 1/2 cup light rum
  • 8 cups crushed ice
  • Mint sprigs and lime wedges, for garnish

In a saucepan over medium heat, add the sugar and water. Cook for about 5 minutes, stirring often, until the sugar is dissolved and the syrup is clear. Set aside to cool.

Put the sugar syrup, lime juice, mint leaves, lime zest, and rum into a blender and blend until smooth. Add the ice and blend until slushy. Spoon into glasses; garnish with a sprig of mint and a lime slice.
