Forget bacon; caramelized onions make everything better. They’re how to make green beans infinitely more appealing and the secret to the best ever onion dip. When gooey cheese comes to play, you’ve got yourself a match made in heaven. It may be a dreary and cold Monday, but Chuck’s Grilled Cheese with Caramelized Onions alongside a bowl of creamy tomato soup will make everything OK.

The key to really good caramelized onions is patience, not a bunch of oil or butter. Cook the onions for at least twenty-five minutes in a heated skillet over medium heat. The low and slow cook time transforms the once harsh and crunchy slices into a melt-in-your-mouth, sweet and savory phenomenon. Pile it high on top of sharp cheddar for a game changing grilled cheese sandwich.

Grilled Cheese with Caramelized Onions
2 tablespoons/30ml olive oil
3 large onions, sliced
Salt and pepper
8 thick slices bread
1/4 cup/60ml butter, room temperature
2 cups/500ml grated aged Cheddar

Heat the oil in a large skillet over medium heat. Saute the onions until soft and caramelized, about 25 minutes. Season with salt and pepper. Transfer the onions to a plate.

Generously butter both sides of each bread slice. In between two bread slices, pile the caramelized onions between two layers of cheese.

Heat a large skillet or griddle over medium-low heat. Cook the sandwiches, flipping once, until the cheese is melted and the bread is golden brown, 2 to 3 minutes per side.
