31 Days of Cookies: Chocolate-Peppermint Cream Sandwich Cookies

This year, we’re celebrating the season with a month of nonstop cookies. For the 14th day of cookies, we’re sandwiching peppermint cream between two chocolaty halves.

When the holidays arrive, our kitchen is taken over by three culinary themes: chocolate, peppermint and cookies. For holiday entertaining, cookies are such a low-stress and crowd-pleasing dessert. This year, to push our guests past that “oh, I’m so full, I can’t eat anymore” hump, we crafted these simply irresistable chocolate and peppermint cookie sandwiches. (There’s always room for a chocolate-mint cookie.) The delicate chocolate wafer halves are filled with a thick, tongue-tickling peppermint creme, making them taste like huge Thin Mints. Sprinkled with a bit of snowy sugar, they are holiday party- and Santa-approved.

As we gear up for the holiday madness — visiting in-laws, parking-lot musical chairs, office parties, endless gift-buying, spending days (or weeks) making and packaging homemade gifts  — one thought continually rolls through our heads: “We need a drink.”

Since it’s rather frowned upon to be seen with flask in hand on a regular basis, it is best to devise incognito ways to sneak in a little nip here and there. (This keeps us calm and ensures that the holidays are, in fact, merry.) There are already several holiday classics intent on serving this purpose: rum balls, trifles, and of course, the ever-popular eggnog. Well, let’s add another treat to the list of holiday stress remedies: a delicate butter cookie with a brandy-laced eggnog icing.

Though innocent in appearance, these high-spirited cookies will bring a twinkle to your eyes (and some rose to your cheeks). You can always play around with your liquor of choice (dark rum, cognac, bourbon or Kahlua are some fun options) and then box up mixed batches as gifts. The holidays are happy once again!

Turkey Sloppy Joes Recipe

Come end of November, the only thing that rivals the anticipation of Thanksgiving dinner is the following week of Thanksgiving leftovers. The midnight fridge raid for a sliver of pie. A scoop of potatoes au gratin reheated for breakfast alongside some scrambled eggs. Another raid on the fridge for another piece of pie.

However, the true king of the leftovers is, of course, the centerpiece of the Thanksgiving meal, the turkey. Maybe it’s because we hardly ever take the time to roast a turkey the rest of the year, because come Thanksgiving, we just can’t get enough. In our household, we’ll even go so far as to roast an extra turkey on Thanksgiving just for the leftovers.

Of all our “turkey reinvented” dishes, Turkey Sloppy Joes is one of our all-time favorites. Saute up some onions and garlic. Add tomato sauce, ketchup, a little vinegar and brown sugar. Throw in a few more ingredients for spice and flavor. Chop up a chunk of the leftover turkey. And no sloppy joe is complete in our house without the addition of cheese. It’s a tradition that goes back to childhood.

This is also the season of parties, which means making rock-star appetizers to feed our partying masses. A holiday party isn’t complete without a roster of appetizers that are not only delicious, but that also make it easy on the cooking and planning side.

Crispy warm gyozas are loved because they’re quick, satisfying bites and, most importantly, they can be made ahead of time. With a bit of planning, you can cook the gyozas ahead of time and just warm them up in the oven before serving. We’ve never had anyone turn down room-temperature gyozas before, so don’t worry if they sit out for a while. It’s guaranteed they’ll be gobbled up before you can get the next batch out of the warming oven.

Cooking up Asian-themed recipes is a staple in our kitchen. There hardly goes a day when we don’t have a meal that has some type of Asian-inspired flavors and spices. These dishes are second nature to us; from the techniques to the ingredients, it all comes rather easy to us.

Unfortunately, we have friends who are so intimidated by Asian recipes that they would rather go out to eat than to even try cooking. Perhaps it’s the thought of exotic spices and ingredients that keeps them from whipping up even the simplest recipes. But it’s definitely understandable when there are recipes that require a long list of unfamiliar ingredients, spices and cooking tools.

One of our goals is to always create Asian recipes for the novice cook. Starting from a simple recipe, the cook can continue to be encouraged to pursue the more extensive Asian recipes. All it takes is some quality five-spice powder to make a simple green bean dish Asian-inspired.
