Fondues (and Don’ts)

Easy Cheese Fondue

Do you fondue? Here’s how to:

Do: Host a fondue party. Fondue is great any time of year, but winter is an especially perfect time to gather friends to dip carbs into a hot pot of melted cheese.

Don’t: Feel pressure. If you’re new to fondue, maybe a party isn’t right for you. Bring a cheese or chocolate fondue to a party or serve with other snacks on a buffet.

If you’re going to pack a sandwich to work, it might as well be this one. Chuck Hughes sandwiches not one, but two shades of sweetness into his Chocolate and Caramel Shortbreads. Oozing with chocolate ganache and caramel, he finishes off the festive shortbread cookie sandwiches with a sprinkle of powered sugar.

The result? Two-toned towers of holiday deliciousness. It’s no wonder he usually makes a second batch, just in case.

David Rocco loves a good cup of espresso, but if you’re looking for a slightly sweeter twist on that Italian classic, try his Chocolate Espresso cookies. Each bite is a taste of David’s Dolce Vita: In the cookies, he combines a double shot of chocolate (semisweet and cocoa powder) with the makings of a real espresso — coffee and milk, offered in balance.

The result? These cookies boast a delicious zip beneath their crackly sugared tops, providing a sophisticated pause amid the season’s bustle and a tasty treat for a mid-afternoon pick-me-up.

Matt Entertains: Chocolate Cherry Cookies

How could you resist?

Consider me late to this party — the one where chocolate and cherry shack up and everyone lives together happily ever after. It’s not that I didn’t think chocolate and cherries would be perfect together, it’s just that cherries can be oh-so-seasonal and if you blink, you miss them. Luckily my newfound love for cherries is sustained during parts of the year other than summer with high quality dried tart cherries from Michigan. And seriously, I’m not trying to be a geographical snob, but I’ve seen (and tasted) the light: sour cherries like Montmorency or Morellos have a tartness and herbal note that marry perfectly with chocolate.
