Comfort Food Mash-Ups, Remixed: Mac ‘n’ Cheese + French Onion Soup

Surfing the wave of mash-up mania that brought the world the Cronut™ and Ramen Burger, we decided to beat the winter by partnering with our brilliant culinary team in order to come up with THE most-indulgent comfort food. Together with Food Network, we’ve mashed up some classic comfort foods in unique — and dare we say, mind-blowing — ways. Over the next several weeks, we’ll be revealing the ways we mixed and remixed some of our favorite dishes, with one recipe appearing on Cooking Channel and the other on Food Network.

When we think of comfort food, the first things that come to mind are soup, cheese and pasta. It’s even better when a dish combines the filling, warming bounty into one awesome dish. Thus mac and cheese — the ultimate high-brow/low-brow craveable pasta — and French onion soup (those cheesy crouton-topped crocks) form this week’s melty mash-up.

Meatless Monday: Sundried Tomato and Basil Mac and Cheese

Meatless Monday is a global movement, a way of life. It’s not a campaign to turn everyone in the world vegetarian or vegan; in fact, many involved are meat-lovers. Eating less meat has been proven to reduce the risk of disease, curb obesity and has important environmental impacts, too. Will you join us in giving up meat, just for one day a week?

On Monday nights, I go for recipes that require minimal prep work and yield leftovers. Not only do I save money, but I also have something delicious to look forward to the next day in the office. Sundried Tomato and Basil Mac and Cheese fits the bill for a low-key dinner — and an extra -pecial lunch for the next day (or two).

You’re never too old for macaroni and cheese. Perhaps you’ve moved past the infamous blue box, but cheesy pasta is a timeless — and ageless — guilty pleasure. This recipe is classy enough to serve at a dinner party but easy enough to make for tonight’s Meatless Monday dinner. If you’re worried about having too many leftovers, halve the recipe or stick some of the extras in the freezer for a quick dinner down the road.

As my husband loves to retort when I ask him how his workday went, “Sometimes you’re the windshield, and sometimes you’re the bug.” Regardless of your side of the motor vehicle, nothing says “time to celebrate” or “let’s get this day over with” as universally as mac & cheese.

And while I love it as much as the next guy or gal, I do still feel a bit bad about just eating a big bowl of cheese-covered starch for dinner. Call it an old habit, but a bit more nutritional balance would be nice. Eating less meat has been proven to reduce the risk of disease, curb obesity and has important environmental impacts, too. Will you join us in giving up meat, just for one day a week?

Chili-anything is usually loaded with meat. Chili dogs, chili-cheese fries and the chili that comes with nachos at a restaurant — always beefy. If you want to start a big fight, tell a chili enthusiast that vegetarian chili is legit. True chili traditionalists believe that chili is made with meat, or it’s not chili at all.

Rachael Ray’s Roasted Squash Chili Mac is an exception to the everything-chili-is-made-with-meat rule. It’s made with roasted butternut squash and chili spices like chili powder, cumin and oregano, plus cinnamon and nutmeg which pair well with the squash. It’s creamy and cheesy like mac and cheese should be, but there’s nary a beef clump in sight.

Bonus: You can assemble the casserole ahead of time and bake it before you’re ready to eat.
