Weekends are important, especially the sun-dappled, backyard barbecue kinds of weekends that characterize summer. While Labor Day is the symbolic end of summer, (after this, school starts, the weather cools down and berry picking gives way to apple picking) take this extra-long weekend to relax in the warm weather with rum-filled, late-summer sippers.

We’re thinking of rum-y cocktails that pair well with sweet and sticky ribs, kabobs, grilled burgers and seasonal produce. From minty mojitos to dynamic daiquiris, rum is our spirit of choice when it comes to showcasing some refreshing flavors.

It’s more than just alliteration; it’s a statement, a proclamation that Thursdays are when the weekend should really start. Kicking it off right is the key, and what better way than with a cocktail that not only takes the edge off, but tastes good too. A hard thing to disagree with, we know. Drink up, get down and go to sleep happy.

You’d be hard-pressed to find something as deeply satisfying and refreshing as eating a fat wedge of watermelon on a hot summer afternoon. Since mid-July in New York means unbearable heat, icy cold watermelon with its ruby flesh and sweet, sticky juice is now the most fashionable cocktail ingredient of the summer.

This fruit salad of a cocktail is juicy, colorful and offers real refreshment. Muddle fresh mint and lime with watermelon and pineapple chunks as the mojito base. Shake with white rum and pineapple juice, and pour into a couple of hefty glasses with lots of ice. It’s your favorite summer fruits against a backdrop of classic mojito flavors. And the best part about this cocktail? You’ll have plenty of fresh fruit leftover for eating.

Inspired by the summer sun, seasonal berries and the new mint plant sitting in my window, I’m starting my weekend (early) by making a Raspberry Mojito, a fruity take on my favorite cocktail.

This entirely refreshing summertime tipple is made with white rum and gets its soft sweetness and blush-pink hue from a raspberry-infused simple syrup. Start this syrup a day in advance, so the raspberries have time to steep and release their juices. The sweet syrup finds its aromatic counterpoint in the muddled fresh mint leaves and slices of lime. This festive and cooling cocktail is the perfect marriage of rum, raspberries, lime and mint.

The key to Memorial Day weekend is simplicity and relaxation with some good food and drink. Any backyard Memorial Day bash should feature sizzling hamburgers off the grill and refreshing pitchers of cold, sweet cocktails. We’re choosing to celebrate with our favorite libation hailing from Cuba, the cooling and minty mojito.

Start by gently muddling the mint to release oils for an herbaceous accent to this spectacular mojito. Then this cocktail is played up with freshly-squeezed lime and lemon juices, light rum, bubbly club soda and lots of ice. There’s no better refreshing, simple and delicious summertime cocktail to whip up for a crowd.

Kicking it off right is the key, and what better way than with a cocktail that not only takes the edge off, but tastes good too. A hard thing to disagree with, we know. Drink up, get down and go to sleep happy.

Long Island Iced Teas aren’t for the faint of heart. They aren’t for the faint of liver, either. Unless, that is, they come as masterfully balanced as Michael Chiarello’s. Starting with the usual suspects — light rum, vodka, gin, tequila and soda — Michael’s Coney Island Iced Tea rounds off each sip with sweet orange liqueur, tart lemon juice and fresh mint. Calling it refreshing would be a terrible understatement. Pour a glassful and you’ll see, before giving in to the temptation to have another.

Tea time just got pushed back a few hours, and for good reason.

Thursdays are when the weekend should really start, and what better way than with a cocktail? Last week we warmed up with a bubbly Blissini; this week we’re back with another cocktail to lighten up that Thanksgiving table.

With trees now nearly bare and autumn leaves left strewn all across the ground, sipping on something orange and alcoholic is our recommendation for toasting to the last bits of fall. With an overdose of fresh oranges and few sprigs of fresh mint for contrast, this exotic mojito is what you should be holding when admiring all that colorful foliage from indoors. So shake yourself up a glass, a pitcher if your hosting, or an entire barrel if it’s for your Thanksgiving feast, and lap up the last drops of fall. Bottoms up, folks.
