If you were to cross a pancake with a popover, you’d get an Æbleskiver. I love eating these traditional Danish pancakes — they aren’t too sweet, have a fluffy texture and are usually served with a variety of jams. I think they would make the perfect breakfast food, served with hot chocolate or coffee. In Denmark, though, they are usually enjoyed around Christmastime paired with glogg, a Scandinavian mulled wine.

We’ve all heard the saying, and even the supporting scientific research, that breakfast is the most important meal of the day. While what was probably meant was a healthy serving of eggs, whole wheat toast and other such staples of the modern American breakfast table, we’ve decided that what was meant was actually pancakes. Lots of pancakes.
What evidence do we have to support this flimsy hypothesis? Well, is there a National Healthy Breakfast Day??? No, there is not (we Googled it). On the other hand, there IS a National Pancake Day, and it just happens to be today. So let’s celebrate our favorite syrup-topped morning treat (sorry, waffles) with a hearty helping of some of the best, most interesting pancakes recipes out there. Not to start another competition of sorts (the Cold War is not that far behind us), but Russian oladyi (aka pancakes) get me far more excited than their American cousins. Somehow, mysteriously, they manage to feel lighter, and their diminutive size, topped with briny salmon roe and sour cream, or jam and sour cream, makes them so much more fun to eat. It doesn’t hurt that they look all festive and decorated — just what the season ordered.

Breakfast for dinner feels special for reasons I’ve never been able to figure out. It seems frivolous or rebellious to eat meals out of order, but it’s nonetheless a great idea. I mean, if it’s a balanced meal and you’re satisfied after eating, why shouldn’t pancakes and omelets be on your plate at dinner? Bobby’s Carrot Cake Pancakes With Maple Cream Cheese Drizzle and Toasted Pecans feel a bit more decadent for a weeknight meal than, say, a Bisquick-made short-stack. But this recipe is easy enough to make, and homemade pancakes trump a boxed mix any day. Especially when there’s cream cheese frosting involved — it’s a delicious way to skip meat this Monday.
