Thirsty Thursday: An Heirloom Tomato Cocktail

Beefsteak Collins Cocktail

Beefsteak Collins Cocktail

It’s more than just alliteration; it’s a statement, a proclamation that Thursdays are when the weekend should really start. Kicking it off right is the key, and what better way than with a cocktail that not only takes the edge off, but tastes good too. A hard thing to disagree with, we know. Drink up, get down and go to sleep happy.

Normally relegated to the likes of Bloody Marys and Micheladas, tomato juice has been looking to make a bigger splash for some time now. Fortunately for everyone, we’ve got just the thing. Starting with in-season beefsteak tomatoes, this heirloom tomato cocktail gets a sweet infusion from thyme simple syrup before it’s rounded off with gin, lemon juice and grenadine. It tastes like if you put sugar on an heirloom tomato instead of salt, and it was delicious.

Bottoms up, folks.

5 Ways to Drink Tequila (Beyond the Margarita)

Here at Cooking Channel, we love us some tequila. Not just because this blue-agave-born liquor is the star of the margarita — arguably our favorite cocktail — but because the sweet, woodsy or smoky spirit (depending on distillery and age) adds its fire to pretty much any mixed drink. This National Tequila Day, salt your margarita glass rims for a different sort of sipper (it’s the Mexican vessel of choice for any tequila-based beverage).

5 Ways to Get Your Tequila On:

1. Follow Chuck’s lead and turn those lemons into a minty-fresh spiked lemonade (shown above).

2. Mix up a two-tone sangria with a pineapple-tequila base and a red wine topper.

This sangria's twice as nice (though you may not think so tomorrow)

Thirsty Thursday: Cool Down with a Piña Colada

Clasic Pina Colada Recipe

It’s more than just alliteration; it’s a statement, a proclamation that Thursdays are when the weekend should really start. Kicking it off right is the key, and what better way than with a cocktail that not only takes the edge off, but tastes good too. A hard thing to disagree with, we know. Drink up, get down and go to sleep happy.

A blistering heat wave has come screaming across the country, which begs the question: has there ever been a better time to sip on a Piña Colada? Light and dark rum star in this wildly refreshing frozen cocktail, blended with classic coconut cream and pineapple juice, along with frozen pineapple pieces for good measure. Bring the beach to your backyard and cool down with a tropical treat this Thursday (or Friday, or Saturday, or Sunday), because, let’s face it, it’s too hot not to.

Bottoms up, folks.

Thirsty Thursday: The Painkiller Cocktail

The Painkiller Cocktail

It’s more than just alliteration; it’s a statement, a proclamation that Thursdays are when the weekend should really start. Kicking it off right is the key, and what better way than with a cocktail that not only takes the edge off, but tastes good too. A hard thing to disagree with, we know. Drink up, get down and go to sleep happy.

Creamy and refreshing, alcoholic and juice-filled, The Painkiller Cocktail packs a multifaceted punch. Each sip carries notes of nutmeg, along with an onslaught of sweet orange and pineapple juice, creamy coconut milk and aromatic dark rum. If you’re looking to take a load off, look no further.

Bottoms up, folks.

Thirsty Thursday: Coney Island Iced Tea

Coney Island Iced Tea

It’s more than just alliteration; it’s a statement, a proclamation that Thursdays are when the weekend should really start. Kicking it off right is the key, and what better way than with a cocktail that not only takes the edge off, but tastes good too. A hard thing to disagree with, we know. Drink up, get down and go to sleep happy.

Long Island Iced Teas aren’t for the faint of heart. They aren’t for the faint of liver, either. Unless, that is, they come as masterfully balanced as Michael Chiarello’s. Starting with the usual suspects — light rum, vodka, gin, tequila and soda — Michael’s Coney Island Iced Tea rounds off each sip with sweet orange liqueur, tart lemon juice and fresh mint. Calling it refreshing would be a terrible understatement. Pour a glassful and you’ll see, before giving in to the temptation to have another.

Tea time just got pushed back a few hours, and for good reason.

Bottoms up, folks.

A Cocktail: Your Crucial Ingredient to Summer Entertaining

You really can’t beat entertaining in the summertime.  It’s not fussy or complicated like having people over for the holidays or Thanksgiving — everyone just piles into the back yard, breaks open a beer and snacks on yummy side dishes while you get your grill on.

A missed opportunity is often in the cocktail arena. Never underestimate how easy it is to impress your guests by handing them a frosty, alcoholic beverage the moment they arrive with the potato salad. Make up a batch of something delicious ahead of time — like Chuck’s Tequila Lemonade (above) — and all you have to do is pour and garnish.

Here are my picks for the hottest cocktails this summer:
